Buttermilk Pancakes

Went to the grocery store yesterday to pick up all the stuff needed to bake for the photoshoot (I'm so excited!). As usual, I woke up at 6am this morning to bathe and feed baby no.2 before putting her back to sleep. Since there's still time to make breakfast, I decided to make some pancakes.

My all-time fav: Buttermilk Pancakes dusted with icing sugar

With maple syrup & salted butter

that's her favorite!

This is so quick and easy to prepare! The trick is to use a good non-stick pan and cook it over low-med heat (it gets burnt very easily). The recipe is adapted from Joy of Baking and is one of the trusted few websites I visit rather frequently (There's also a video that you can watch and follow closely!). I've posted the recipe below for your easy reference.

Buttermilk Pancakes Recipe:

1 cup (130 grams) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons (28 grams) granulated white sugar
1 large egg, lightly beaten
1 cup (240 ml) buttermilk
3 tablespoons (40 grams) unsalted butter, melted
Plus extra melted butter for greasing the pan.

Buttermilk Pancakes: In a large bowl whisk together the flour, baking powder, baking soda, salt and sugar. In a separate bowl whisk together the egg, buttermilk, and melted butter. Make a well in the center of the dry ingredients and then pour in the egg mixture, all at once, and stir (with a rubber spatula or wooden spoon) just until combined. The batter should have some small lumps. (Do not over mix the batter or the pancakes will be tough.) (The pancake batter can be covered and stored in the refrigerator for up to 24 hours.)

Heat a frying pan or griddle over medium high heat until a few sprinkles of water dropped on the pan or griddle splatter. Adjust the temperature as needed. Can also use an electric griddle with the temperature set at 350 degrees F (180 degrees C). Using a piece of paper towel or a pastry brush, lightly brush the pan with melted butter or oil (or spray with a non stick vegetable spray.)

Using a small ladle or scoop, pour about 1/4 cup (60 ml) of pancake batter onto the hot pan, spacing the pancakes a few inches apart. When the bottoms of the pancakes are brown and bubbles start to appear on the top surfaces of the pancakes (2-3 minutes), turn over. Cook until lightly browned (about 1-2 minutes).

Repeat with remaining batter, brushing the pan with melted butter or oil between batches.

Serve immediately with butter and maple syrup or your favorite jam.

Makes about 8 - 4 inch (10 cm) pancakes.

While I was eagerly looking for an affable and affordable web designer and poring over old contacts looking for the equivalent in printing (oh yes my own cake box!), my dear hubby posed this question last night, "Dear, don't get me wrong, but are you doing this for interest or living?"

Ok there goes your money hun...

This started and has always been my interest but somehow I wished for something different or more. It was (and still is) fun baking for family and friends and friends of friends although sometimes alittle frustrating (when the cakes turned out wrong) and looking at the piles of mess to clear aftermath. The thing is I thought this would be the next step to take before jumping the wagon of aspiring baker/entrepreneurs.

So my dear hun, as with the famed book title,I also aim to bake, pray and hope that someone will love to eat it again and again!!! And yes, I do pray the 'little' investments made will go a long way...

Reinvent, Revitalise and Revamp!

After long (overdue) thoughts and consideration, I've decided to quit my job and focus on Heychocolat Bakeshop. For a start, Heychocolat will be focusing on what this blog first started out with: Darn Good Chocolate Cake and other chocolatey desserts - Feel Good Brownies and Triple Indulgence Cheesecake (I will upload the pics soon!).

Prices have also been adjusted due to rising ingredient costs! I'm really bad with pricing and prices weren't adjusted for the past 3 years. But for all Heychocolat Fans (Just Click Like on Heychocolat FB page), you will enjoy 10% off all purchases for the first 100 fans only (excluding delivery charges if any). Afternote: I'm also really bad with tech stuff and a scatterbrain so you may want to email me with your name and email address just to confirm! (For those who'd ordered from me before, you are auto-included as my fans already!)

As for starting my own bakery/cafe, plans are underway and to my surprise, my dad actually helped sourced for a shop space near my place and asked if I wanted to takeover but with the current constraints, I'll just have to take a step at a time before jumping to run my own.

For the time being, I'm currently on the look-out for a good web designer to create a new website so it's more organised (rather than the haphazard posts and pics thrown everywhere on this blog). Do email me - heychocolat@gmail.com if you're a web designer or if you know one.

Oh yes, in case you're still wondering, I'm still around and when time permits, bakes an order or two.

There are moments of contemplation if I should continue (and up the price?), change the focus (cupcakes only?), or open a bakeshop/cafe?! But there are just too many factors to consider and to my mom, I should just focus on taking care of my kids till they are older but by then, I might as well be considering retirement!

Hi everyone, it's with much regrets (and pain as I type this on my tiny iPhone) that I'll not be able to continue/take in orders till further notice. It's been great knowing you all and that there are people (albeit a handful) who love my creations! Besides getting busy with the bakes, we're also preparing for the arrival of our second child (sometime near CNY). Heychocolat Bakeshop will not be taking orders temporarily from FEB2011-MAR2011 with regrets (or till we figure out her/our daily routine) but do feel free to email us as we could perhaps squeeze in an order or 2.

Speaking of special requests, I've received emails requesting for fondant-theme cakes or cupcakes with fondant figurines. I've always shy away from fondant mainly because I don't bake something which I don't eat and also, they don't hold up well in our climate.

Recently, I've read online that certain brands of fondant and methods could preserve the fondant cake/figurines for longer periods. I decided to give it a try and trial-test a batch of fruit cupcakes before I commit to taking in orders and also, I'm in the mood for some play-doh!

Don't be fooled by these minis, it took me ~~4 hours~~ One WHOLE day to complete. Santa's topsy turvy hat already took half hour to complete. These batches were left to dry on the tabletop in the living room and the figurines still look good after 24 hours but you could see the fondant-covered cakes 'weeping' - still ok.

The next batches were stored covered in the fridge. It kept the shape well but condensation forms on the figurines and cakes (not to mention the color runs) as soon as they were removed from the fridge - bad.

Verdict: I will just stick to making fondant figurines instead of covering the whole cake w/fondant - personal palate issue and also the time/effort spent on a cake. The figurines will go on top of cakes last/on the delivery day itself. If consumption is on a later date, best to remove the fondant pieces, wipe clean/dry and keep in airtight bags/boxes at room temperature before keeping the cupcakes separately in the fridge. This will keep both the cakes fresh and the fondant pieces intact.

Thousand apologies to all who had sms-ed /called / emailed and i took darn too long to reply - I'M TERRIBLY SORRY!!! & extremely grateful to all for your concerns and well wishes. Unfortunately, I will not be taking bake orders anytime soon as doctor had ordered plenty of bedrest after having gone through amnio test - got poked twice (ouch!) which is another story...might as well share it here:

Nightmare begun when i went to this so-called reputable clinic, located at Ang Mo Kio Ave 8. He happily scanned, printed pics and took my blood without explaining to me what the test is for (just said it's 'very advanced and very important'), the costs, what to expect from the results. i'm so so dumb (i know) considering it's my second pregnancy and i shld have taken the initiative to check w/him first. I didn't because i assumed all doctors are kind and have the onus to explain to patients without asking and i thought nothing wld go wrong.

FIRST SHOCK: Bill came up to $500++ (got to know from the staff the special blood test = OSCAR test) went back home straightaway and spent hours to google about OSCAR.

SECOND SHOCK: Results came back high risk and they didn't inform me straightaway - i called them! Here's the conversation b/w me and one of their staff:

Staff: yeah your result came back but i can't tell you over
the phone. you've to make appointment to see the doctor.

Me: you mean he can't tell me now? Can i see him tomorrow
then?

Staff: tomorrow he's fully booked (almost impatiently).
you can come in to wait.

Me: you mean it's not urgent? then can i stick to my
appointment date (which is a month later)?

Staff: can if you like (hanged up!).

oh yes, i'm still cursing and swearing as i type this. I hope none of you will meet irresponsible people like them *pui*. Anyway, my hubby called the clinic straightafter (from San Francisco) and demanded to talk to the doctor (after losing his temper and screaming at the staff). The doctor eventually told him the news that we dreaded and we immediately went for a second opinion. i shld have just trusted my instincts and not gone to see this doctor considering he freely advertises his abortion services online (what can be expected from someone who don't even believe in or treasure life?).

anyway, long story short, we found a specialist at Camden Medical who told us the results are totally inaccurate and nothing's wrong w/our baby. But perhaps my own anxiety and inability to cope w/the 'what-ifs', we still went ahead w/the amnio test. we got hold of another professional gynae who took time and patience to explain to us on our results and gave us the option to do the amnio test or wait for the 20wks' scan for better judgement. Luckily, the test went well (albeit the 2 needling pokes - doctor said my baby keeps moving towards the needle) and hopefully, everything will go smoothly from now...

i don't drink coffee till recently. have been sipping quite a fair bit these days, to keep myself awake. missed those days when i could just spend time testing recipes and having fun messing around with my little one in the kitchen.

am delighted though to receive some well-wishes and requests for my bakes. thank you my dear friends...i'm happy to know you all still remember! I will start baking soon or rather, i'm hoping to if everything goes well.

Friends close to me know i've been thinking or deliberating to start my own cafe/knick knack store. People around me gives me the inspiration to go all out and realise the dream. Veron, sweet young lady whom i've met online by chance and Delcie, awesome and driven baker whom i hope i will be able to work with one day.

another inspiration comes from her, wished i had visited her cafe before it was closed late last year. she's thinking of re-opening her cafe and some suggested Ann Siang Hill. what do you guys think?

Strawberry Souffle (not in pic) is by far the best mix of sponge and cheesecake with just enough strawberries as toppings. it's the only piece that will make me reach for a second slice. This is followed by the Mango cheesecake (my mom's fav) with the tangy mango sauce and light cheese base. As for Mont Blanc, my heart remains with Agnes B's.

As for the 2 with the least votes, have you tried my Strawberry Shortcake or Darn Good Chocolate Cake?

Yay! Finally met up with Vikki after 2 long years! Woke up early morning and bought us dim sum (opposite City Garden Hotel).

This restaurant serves very traditional dishes like cheong fun (rice noodle rolls), har kow (prawn dumplings), pai kuat (ribs with black beans) but no juk or porridge.

Next, Vikki got us a discount taxi and started our shopping journey to:

Space warehouse at Ap Lei Chau or Aberdeen Island - Prada, Helmut Lang, Miu Miu at discounted prices (totally forgot about Joyce warehouse which is a few blocks away)
Back to CWB, Lane Crawford for coffee and Milan Station for secondhand bags (Thanks K for the Gucci!)

After a satisfying shopping experience, we sat down for some crabmeat porridge and shrimps noodles near Milan Station.

Didn't get much pictures cos Shanen nearly choked on a crab cartilage. freaked everyone out and aunties from nearby tables looked on in fear (or disgust probably) as I stuck my fingers into her mouth to get her to puke, luckily she's managed to spew out in my hands and K conveniently took a bowl for me to discard every gooey bits *oops!*

Hong Kong 2010 (Day 3)

Decided to visit the infamous Ladies Market at Mongkok. Got off a bad start as we took the wrong ferry to Kowloon (instead of Hung Hom). Amazingly i didn't get sea-sick on this ride. Maybe cos it's a much shorter ride and less crowd (which is only HKD4 per trip). Afterwhich, we hoped on bus 6C to get to Ladies Market.

the drivers totally ignored us when i mispronounced Ladies Market in Cantonese

One thing to say about the market is there are really a lot of knock-offs (found Juicy Couture, Miu Miu, Prada, Gucci, LV) but they are not cheap. The average LV, Miu Miu or Prada (those *A* grade ones which they will only show you if you're interested to buy) can easily set you back for HKD900-HKD1200.

WARNING: Never try to bargain if you don't intend to buy. We were literally chased down the street with angry, fingerpointing, swearing aunties. We also noticed the few stalls that sell those knockoffs, are practically owned by one man, whom seemingly followed us as we *happily* bargained our way from one stall to the other. We were lucky to make our way out without being clobbered. Next stop, brunch at the fusion restaurant alongside Ladies Market.

Took the MTR to Causeway Bay for more shopping. The subway or underground walkways are linked to Sogo, Times Square and World Trade Centre. Had high tea at Agnes b Cafe at WTC, best chestnut puree cake I'd tasted so far!

We didn't really spend much time shopping as the crowd were really suffocating! We inched our way out from MTR and inched our way through the crowd and back.

Last note, if you're into quirky finds and local designer stuff, visit La Foret (behind Sogo)。 Found this there but the shop (no。208) was closed!!!

Hong Kong 2010 (Day 2)

What we should have done:

Taken the MTR/discount taxi to Disneyland (we've to wait for the hotel bus to pickup and be back at a certain timing, not to mention the many stops that it made to pickup other hotel guests)
Bought tickets @ Disneyland Counter (someone got crew discount)
Stayed a night @ Disneyland Hotel (so we could take our time to explore)

We did made use of the remaining time (before the bus picks us back) to do some shopping at Citygate outlet via the Mickey Express and MTR.

Not exactly the factory outlet that we were so looking forward to though you'll find Gucci, Kate Spade, Coach at slightly cheaper prices compared to those in Causeway Bay and Changi Airport DFS. I'll just have to wait for K's trip to SF or AKL.

We did bought a few pairs of shoes (for me & Shanen) and had dinner at the foodcourt there (well it's cheaper than in Disneyland!)

Hong Kong 2010 (Day 1)

From Hotel Ibis

Our first family trip to Hong Kong! Thanks to K's recent promotion and the perks that come with it (finally!) K's invited to attend his friend's wedding and i took the chance to visit a dear friend of mine and for Shanen - Disneyland.

Based on travel reviews, it's relatively easy to get around as everywhere is well-connected to the local MTR stations and bus services. So we did it the tourists way but without further research. Upon arrival at HK International Airport (赤乐角机场)， we eagerly queued and bought the express train ticket (conveniently located right outside the immigration checkpoint - so we/tourists won't miss it) at HKD160 for 2 (equiv to S$32) to Central before hopping on the MTR (another HKD20) to our hotel, Ibis at Northpoint (北角)。 BIG MISTAKE - we knew that Hong Kong is crowded, that was such an understatement. It's OVERLY CROWDED. Just imagine you taking the MRT during rush hours, well it's basically rush hour all day/night in HK.

Later, as we found out from our friends, Jason and Vikki, there are discount taxis (打折德士) that offer discounted fares but calls have to be made half hour in advance. Well, personal choice really. If you are travelling solo without the kids, it makes more sense to take the earlier option.

After meandering our way through the stations and crowds, we finally got to our hotel...

The only thing that's uplifting was the view from the hotel...when the weather permits that is. Most of the time it's blocked by the haze. The other comforting thing was the food choices available around the hotel. PLENTY of cheap and mouth-watering treats (even the roadside stalls). Do try:

Breakfast at Lok Tin Tea Restaurant (乐天茶餐厅) or 有你有我茶餐厅 a few steps away from the hotel which is opened 24hrs.
Snack on the braised beef intestines/squids/fishballs (鱼蛋) at 十三座牛杂 next to the hotel across the street- you will find the locals queuing and eating right infront of the stalls with metal plates.
Lunch at Yung Kee restaurant that sells excellent roast meat/goose rice and herbal soups at reasonable prices (to me it's cheap!)
Dessert from the famous Tsui Lau Shan (许留山) - Thumbs up for Mango with pomelo dessert drink and mango/orange mochi with coconut flakes (sorry too late to get the pics as K merrily consumed it on his way back to the hotel).

Day 2 to Disneyland...tomorrow!

Strawberry Hearts Jello & Cheese Dessert

This dessert is definitely a hit with kids and a sure winner at parties or get-togethers with friends and family. Made of layers of biscuit crumbs, cream cheese and strawberry jello, this tastes as good as it looks. Sadly, this dessert doesn't hold well in our weather (the jello was melting when I took the pics after slicing the slab below). So it's best served chilled right after dinner and store leftovers in the fridge else you'll see those tiny little fellas wandering around your worktop.

Speaking of tiny, I felt like a lilliputian yesterday. It was a long-awaited interview opportunity. I was exhilarated when I received their call, which I thought I didn't make it as the resume was sent 2 months ago. I was unusually nervous but I was all prepped (I even did my hair at a salon!) for the interview.

For a start, things doesn't look too good. It's not very reassuring when you see 5 other smartly-dressed with highly-educated-looks waiting for their turn to be called. It doesn't help when I'm petite (damn, I knew I should have worn those heels).

The real crunch came when the interviewer started with, "you don't have a degree in humanities or education...you'll have a longerrr learning curve..." stopped abruptly with pursed lips and eyes fixated waiting for my answer. What can I say? "Oh Ok, what the ____? Didn't you READ my resume? I'm a business communications grad! For Gawdddddd's sake."

Of course, I didn't or couldn't say that for the following reasons:

I need a job
I need the money
No JOB = NO $$$

Plus the fact that it's a stat board, absolutely no obscenities unless you plan to migrate.

The interview was, of course, over in less than 5mins. I thanked them, excused myself and left with heavy steps, even the hair felt heavy. Maybe it's the hair.

Anyway, that was yesterday. I felt alot better now (after having 1/2 dozen of strawberry cheese). At least something to cheer about yesterday...perhaps, I should just stick to baking?

Sugar Rush

Just went to Bakerzin and treated myself to a bag load of macarons. I'm in desperate need of sugar, chocolates or anything sweet and rich for comfort (more of that later). Tried the chocolate/strawberry macarons (sorry couldn't take any pics of these enticing little buns cos I left my camera and part of my brain at home)...anyway, it was disappointing. I was expecting something smooth, chewy and moist but these were too crumbly. So next,
good ol' choco-pie did lift my spirits...for 5 secs and it's back to misery. Called the Hubby and as usual, gave his support and reassurance in an unmistakable and oddly soothing tone, that never fails to perk me up. Oh, not to mention the new phone that he's getting for me, which he says it's a gift for our wedding anniversary, though a month away. This is why I married you (not because of the gifts, pleaaaaaseee), you make up for the other half that I'm lacking, ie, keeping cool, calm, composed, confident, and staying positive. Thanks dear for everything!

Now, back to the kitchen to make my favourite strawberry jello cheesecake for dessert!

Made these for my niece's birthday last weekend.

Sugar cookies decorated with fondant (home-made) and sprinkles (store-bought)

This is for my cousin Lucinda who's very interested to know how I made these. I just followed the Wilton recipe that came with the mini cookies cutters I bought at Shermay's but with a little tweak of my own. Makes about 30 cookies.

Sugar Cookies Recipe

115gm unsalted butter, softened at room temperature for about 30mins
140gm caster sugar
1 tsp clear almond extract
1/2 tsp clear vanilla extract
180gm all-purpose flour
1 tsp baking powder
1/2 tsp salt
Half an egg (I used 25gm out of 55gm egg measured on a digital scale but you may well use your own judgement)

Preheat oven to 400°F. Mix flour, baking powder and salt in a bowl and set aside. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in the egg and extracts. Add the flour mixture into the mixing bowl, 1 cup at a time, and mix until smooth or dough-like.

For this recipe, you do not need to chill the dough (although many recipes call for it). After mixing, roll out dough 1/8 inch thick on lightly floured surface. Dip cookie cutters into flour before each use. Place cookies on ungreased baking sheet and bake for 6-7 minutes or until lightly browned. Remove tray from oven and leave cookies to cool slightly before removing them from baking sheet to cool completely on cooling rack.

Marshmallow Fondant Recipe (adapted from Cake Journal)

128gm regular/white marshmallows
1 tbsp water
250gm icing sugar, sifted
Crisco for greasing hands, mixing spoon and worktop
Food colors (I used wilton gel paste) or cocoa powder

Put the marshmallows in a heatproof bowl and add the water. Put the bowl in the microwave oven and heat it on high for approx. 30 secs. Stir the marshmallows until smooth and sticky. This is the time where you can add your chosen food color/cocoa powder or give it flavour.

Now add the icing sugar and stir the mixture with a well greased spoon. Keep adding icing sugar until it looks like a dough. Turn out the “dough” on a greased work board and with your hands greased with Crisco start kneading the marshmallow fondant. Keep adding the icing sugar a little at a time until it is not sticky anymore.

Be careful not to use all the icing sugar as too much icing sugar can make it too dry. It is ready when it feels pliable and ready to roll. If you are not using the marshmallow fondant straight away, rub a bit of Crisco on it and wrap it in cling-film and seal it in an airtight bag.

Or to save yourself some trouble, just buy a pack of marzipan (aka white fondant) at any supermarkets. To colour the marzipan, use a toothpick to dip into the gel paste (a little goes a long way) and put it on the marzipan and knead till there's no visible streaks left.

With everything packed, stacked and boxes chocked full of baking supplies, I can finally bid farewell to my old unpredictable oven which, I feel, longs to take a break from the heat and overuse.

As we awaits our move into the new kitchen, I've been playing around with the blog's templates, colors and fonts but still undecided on the final look. After hours of previewing and pestering the Hubby to decide, we finally settle for the plain but refreshing new look.

Snow WhiteA light buttery sponge made with 100% Madagascan vanilla extract covered with our classic cream cheese and white chocolate icing. Available with a variety of sprinkles or sweeties.

Cherry Bomb (Temporarily OUT OF STOCK)A cherry flavoured sponge iced with cherry buttercream and topped with real cherries.

It's been a busy week but was well worth the effort! Made these for a friend last weekend. Hope you like them as much as I do, Hellen! So sorry that we couldn't make it in time for your mom. We'll make one for her when she's here again :)

"Chocolat" (say: sho-co-la), it's chocolate in French. It all started out as an interest and love for cakes, anything chocolatey rich will entice me. My all-time favorite is one covered with dark chocolate ganache without any cream or fruit toppings. Somehow, toppings turn me off. Most likely it's because they tend to spoil the goodness of chocolate unless it's topped with more chocolate, of course!

Soon, I started to scour the entire web and books for recipes to learn to make my very own chocolate cake. After countless tries and failures, I came up with one which I'm truly satisfied with plus several thumbs-up from family and friends and thus, to this I call my very own,
